Ingredients

  • 3 eggs
  • 1 c. vegetable oil (I use Mazola)
  • 2 1/2 c. sugar
  • 2 c. unpeeled zucchini or cocozel squash, grated coarsely*
  • 3 c. flour
  • 1 tsp. soda
  • 1/4 tsp. baking powder
  • 1 Tbsp. cinnamon
  • 1/2 tsp. salt
  • 1 c. raisins or currants
  • 1/2 c. chopped nuts
  • 1 tsp. lemon flavoring
  • 2 tsp. vanilla

Directions

    Beat eggs until fluffy.

    Add vegetable oil, sugar and zucchini or cocozel squash.

    Sift together the flour, soda, baking powder, cinnamon and salt.

    Add raisins or currants, chopped nuts, lemon flavoring and vanilla.

    Bake at 325° for 1 1/2 hours in prepared tube pan.

    Cool 10 minutes before removing from pan (you may put in 2 loaf pans and bake at 350° for 1 hour).
