- 1 1/2 pounds yellow squash (cleaned and sliced)
- 1 medium onion, chopped
- 2 eggs, well beaten
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup all purpose flour
- 1 teaspoon baking powder
- vegetable oil or spray
Directions

1Combine squash and onions in a medium saucepan with salted water to cover.

2Bring to a boil and cook 10 minutes, or until squash is tender, drain well.

3Mash the squash and onion, and drain again.

4Stir in eggs, salt, and pepper.
