Squash Casserole

Ingredients

  • 5 or 6 small or medium squash
  • 2 (8 oz.) pkg. mild Cheddar cheese
  • 2 eggs
  • 1 or 2 small onions (optional)
  • 2 packs Ritz crackers
  • 2 c. milk
  • 1/2 stick margarine

Directions

    Cook squash and onions on top of stove until tender.

    In a mixing bowl, stir milk, margarine and eggs until well mixed.

    In a large casserole dish, put one layer of drained squash and onions on bottom.

    Shake one pack of crackers on top of squash; shake 1 pack of cheese on top of crackers.

    Then pour half of liquid mixture on top of cheese.

    Repeat one more layer the same way.

    Cook in oven for 30 minutes or until brown.

    Serves 8 or 9.
