Squash Casserole

  • 5 to 6 medium size yellow squash, sliced
  • 1 medium onion, diced
  • 8 oz. sour cream
  • 16 oz. shredded Cheddar cheese
  • Ritz crackers, crumbled (approximately 2 rolls)

Directions

    Boil squash and onions until tender.

    Drain well and mix with sour cream.

    Layer in casserole dish as follows:

    1 layer squash, 1 layer cheese and 1 layer crumbled Ritz crackers.

    Repeat layers, ending with crackers.

    Dot top with margarine.

    Bake at 350° for 30 minutes or until golden brown.
