  • 6 to 8 yellow squash
  • salt and pepper to taste
  • 2 Tbsp. butter
  • 1 bouillon cube (beef)
  • 1 medium chopped onion
  • 1 egg, well beaten
  • 1 c. sour cream
  • 1/2 c. bread crumbs
  • 1/2 c. grated cheese

Directions

    Cook squash until tender and drain; mash squash and add salt and pepper, bouillon cube, butter and onion.

    Add egg, sour cream, and cheese.

    Pour into casserole dish.

    Sprinkle bread crumbs over mixture and bake at 350° for 30 minutes.
