  • 2 lb. yellow squash
  • 1 medium onion, chopped
  • 1 large sweet green bell pepper, chopped
  • 4 large eggs, beaten
  • 1/2 pt. whipping cream
  • 1/2 lb. Cheddar or American Kraft cheese, grated
  • 48 Ritz crackers
  • 1 tsp. sugar
  • 2 tsp. seasoned salt
  • 1 tsp. salt
  • 1/2 lb. butter or margarine

    squash without salt until tender; drain and mash. Braise onion

    and pepper in half of the butter.

    Crush 24 Ritz crackers and

    and pepper to square mixture.
