Squash Casserole

Ingredients

  • 2 lb. fresh squash, cooked and drained
  • 1 carrot, grated
  • 1 large onion, grated (I cut mine in small pieces and cook in small amount margarine)
  • 1 c. sour cream
  • 1 can chicken or mushroom soup
  • 1/2 pkg. Pepperidge Farm herb stuffing mix or cracker crumbs (on top)

    Grease large casserole dish.

    Sprinkle 1/2 of stuffing mix on bottom.
  3. 3
    Combine first 5 ingredients and mix well.

    Pour over stuffing mix in casserole.

    Sprinkle remaining stuffing mix over squash.

    Bake at 350° until bubbly, about 20 to 30 minutes. Serves 6 to 8.
