Squash Casserole

  • 4 medium squash, diced
  • 3/4 c. shredded carrots
  • 1/2 c. chopped onions
  • 6 Tbsp. butter
  • 2 1/4 c. herbed stuffing cubes
  • 1 can condensed cream of chicken soup (Campbell's)
  • 1/2 c. sour cream

Directions

    Cook squash until tender. Drain. In separate pan, cook carrots and onion in butter until tender. Stir in cubes, soup and sour cream. Mix with squash. Pour into 1 1/2-quart casserole dish. Bake at 350° for 30 to 40 minutes.
