- 8 medium size squash
- 1 small onion
- 2 c. grated Cheddar cheese
- 3/4 c. milk
- 1/2 stick butter
- 2 eggs, beaten
- 2 c. Ritz cracker crumbs
Directions

1Dice up squash and onion; add salt and pepper to taste.

2Boil until tender. Drain and place into large mixing bowl; add beaten eggs, cheese, milk, butter and crushed crackers.

3Mix all together and pour into a well greased buttered casserole dish; bake at 350° for 1 hour. If desired, sprinkle 1 roll of Ritz crackers on top of casserole before baking.
