Squash Casserole

Ingredients

  • 8 medium size squash
  • 1 small onion
  • 2 c. grated Cheddar cheese
  • 3/4 c. milk
  • 1/2 stick butter
  • 2 eggs, beaten
  • 2 c. Ritz cracker crumbs

Directions

    Dice up squash and onion; add salt and pepper to taste.

    Boil until tender. Drain and place into large mixing bowl; add beaten eggs, cheese, milk, butter and crushed crackers.

    Mix all together and pour into a well greased buttered casserole dish; bake at 350° for 1 hour. If desired, sprinkle 1 roll of Ritz crackers on top of casserole before baking.
