- 6 yellow summer squash
- 1/2 c. salted water
- 3 tsp. butter
- 3 peeled tomatoes or 1 medium can
- 1/2 c. green pepper, diced
- 1 medium onion, diced
- 1/2 tsp. sugar
- 3 Tbsp. flour
- salt and pepper to taste
Directions

1Slice and cook the squash in salted water until just tender (do not overcook).

2Saute green pepper and onion in butter until tender.

3Add tomatoes and cook 5 minutes.

4Add sugar, flour, salt and pepper to tomatoes and cook until thickened.

5Place squash in casserole, add tomato mixture.

6Top with buttered bread crumbs and grated Cheddar cheese.

7Bake 30 minutes at 350°.
