Squash Casserole

Ingredients

  • 6 yellow summer squash
  • 1/2 c. salted water
  • 3 tsp. butter
  • 3 peeled tomatoes or 1 medium can
  • 1/2 c. green pepper, diced
  • 1 medium onion, diced
  • 1/2 tsp. sugar
  • 3 Tbsp. flour
  • salt and pepper to taste

Directions

    Slice and cook the squash in salted water until just tender (do not overcook).

    Saute green pepper and onion in butter until tender.

    Add tomatoes and cook 5 minutes.

    Add sugar, flour, salt and pepper to tomatoes and cook until thickened.

    Place squash in casserole, add tomato mixture.

    Top with buttered bread crumbs and grated Cheddar cheese.

    Bake 30 minutes at 350°.
