Squash Casserole

Ingredients

  • Durkee French fried onions
  • 1 medium onion, chopped
  • 2 c. cooked squash, well drained
  • 1 can cream of chicken soup
  • salt and pepper to taste
  • 1 c. shredded Cheddar
  • 1 stick margarine
  • 2 eggs
  • 2 c. crumbled corn bread

Directions

    Chop onion and cook in 1 stick margarine until onion is transparent.

    Mash squash with fork.

    Combine onion and margarine with slightly beaten eggs.

    Add soup, squash and bread crumbs. Salt and pepper to taste.

    Mix well.

    Pour into greased casserole dish and bake at 350° for 20 to 25 minutes.

    Before last 10 minutes of baking, top casserole with Cheddar cheese and French fried onions.
