Squash Casserole

Ingredients

  • 7 or 8 medium squash
  • 4 eggs, beaten
  • 3/4 tsp. salt
  • 1 Tbsp. melted margarine
  • 1 c. grated strong cheese
  • 1/2 c. milk
  • 3/4 c. cracker crumbs
  • 1/2 c. chopped onions
  • pepper to taste

Directions

    Add salt to squash and cook until tender in enough water to cover squash.

    Pour off excess liquid and mash.
  3. 3
    Add eggs, milk, onions, margarine and cheese.

    Pour into casserole and top with cracker crumbs.

    Bake at 350° for 40 minutes.
