Squash Casserole

  • 2 lb. yellow squash
  • 1/2 c. chopped onion
  • 3 eggs
  • 1/2 c. evaporated milk
  • 3/4 c. cracker crumbs
  • 4 Tbsp. butter
  • 1 1/2 c. grated sharp Cheddar cheese

Directions

    Cook squash and onion together until tender.

    Drain well.

    Add cracker crumbs, butter and one cup of cheese.

    Beat eggs with milk and add to the squash and onion mixture.

    Pour into buttered casserole and top with remaining 1/2 cup of cheese.

    Bake at 425° for 30 to 45 minutes.
