- 2 lb. yellow squash
- 1/2 c. chopped onion
- 3 eggs
- 1/2 c. evaporated milk
- 3/4 c. cracker crumbs
- 4 Tbsp. butter
- 1 1/2 c. grated sharp Cheddar cheese
Directions

1Cook squash and onion together until tender.

2Drain well.

3Add cracker crumbs, butter and one cup of cheese.

4Beat eggs with milk and add to the squash and onion mixture.

5Pour into buttered casserole and top with remaining 1/2 cup of cheese.

6Bake at 425° for 30 to 45 minutes.
