Ingredients

  • 3 c. squash (zucchini and/or yellow)
  • 2 eggs
  • 1 Tbsp. margarine, melted
  • Ritz crackers, crushed to make 2 c. or 1 box Stove Top cornbread stuffing
  • 1 medium onion, chopped fine
  • 2 c. grated cheese
  • 1 Tbsp. milk
  • 1 can cream of chicken soup

Directions

    Grease a 9 x 13-inch casserole. Cook squash until tender; drain.

    Mix all other ingredients and combine with squash.

    Pour into prepared casserole.

    Bake at 350° for 30 to 40 minutes until browned on top.
