Squash Casserole

  • 1 lb. squash
  • 1 small onion
  • 3 Tbsp. butter
  • 1/3 c. milk
  • 2 eggs, beaten
  • 1 c. cheese, grated
  • 1 c. cracker crumbs
  • salt and pepper to taste

Directions

    Combine first 2 ingredients.

    Cook, drain and mash.
  3. 3
    Add remaining ingredients, reserving 1/2 cup cheese to sprinkle over top.

    Pour into buttered casserole.

    Bake at 375°until firm and cheese is brown.

    This is good with a few onion rings sprinkled on during the last 5 minutes of baking.
