Squash Casserole

  • 1 1/2 lb. squash, cut up (5 medium)
  • 2 lb. potatoes, cut up (6 or 8)
  • 1 pkg. Hillshire sausage, cut up
  • 1 onion, cut up
  • 1 bell pepper, cut up
  • sliced Velveeta cheese (as many as needed to cover)

Directions

    Cook in electric frypan at 325°.

    Fry potatoes in oil to cover bottom of pan until halfway done.

    Add squash to potatoes.

    Cook about 10 minutes.

    Add onion and bell pepper.

    Cook until onion and bell pepper are done, stirring frequently.

    Add sausage.

    When sausage is done, cover the top with cheese until melted.

    Serve hot.
