Squash Casserole

Ingredients

  • 1 large or 2 medium zucchini
  • 2 medium yellow squash
  • 1 medium onion
  • 1 green pepper
  • 1 c. grated Cheddar or substitute-Cheddar cheese
  • 1/2 lb. bacon, fried
  • 1 large tomato, diced
  • 1/8 tsp. garlic powder
  • 1/8 tsp. onion powder
  • 1/8 tsp. chili powder
  • 1/2 tsp. Italian seasoning (dry)
  • salt and pepper to taste

Directions

    Chop onion.

    Seed and dice pepper.

    Fry and crumble bacon. Dice tomato and cook in small pan until soft and most of the juice has thickened.

    Cut squash into small pieces.

    Saute squash, pepper and onion in small amount of bacon grease, in small batches.

    After all is sauteed, mix in a large bowl or pan, other ingredients, except cheese and bacon.
