Squash Casserole

  • 2 lb. (6 c.) squash
  • 1/4 c. chopped onion
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 c. shredded carrots
  • 1 (8 oz.) pkg. herb seasoned stuffing mix
  • 1/2 c. melted margarine

Directions

    Slice squash; add the chopped onion and boil in salted water for 5 minutes.

    Drain.

    Mix soup and sour cream; stir in carrots and fold this into squash-onion mixture.

    Combine stuffing and butter; layer 1/2 of this into bottom of baking dish.

    Spoon vegetable mixture over the stuffing and sprinkle remaining stuffing mix on top of the vegetables.

    Bake at 350° until the dish is hot and bubbling.
