Ingredients

  • 1 lb. squash (more if needed)
  • 1 tsp. sugar
  • 1/2 c. mayonnaise
  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1/2 c. chopped pimento
  • 1/2 c. grated cheese (sharp)
  • 2 eggs
  • 1 tsp. salt
  • 1/2 stick oleo
  • 1/2 c. bread crumbs, dried
  • 3/4 c. grated cheese

Directions

    Cook squash in salted water until tender.

    Mash squash and drain.

    Add other ingredients.

    Pour into buttered baking dish and top with bread crumbs and 3/4 cup grated cheese.

    Dot with butter. Bake at 350° for 35 to 40 minutes.
