Squash Casserole

Ingredients

  • 2 lb. (6 or 7 medium) yellow squash
  • 1 c. chopped onion
  • 1/2 stick margarine
  • 1 can mushroom soup
  • 1 c. grated cheese (I put Marathon, 1 c.)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

    Prepare squash; boil until tender and drain thoroughly.

    Place squash in medium-sized mixing bowl.
  3. 3
    Add onions, butter, soup, salt, pepper and 1/2 of the cheese.

    Mix well and pour in casserole dish.

    Add remaining cheese and bake at 350° for 20 to 30 minutes.

    (I stir all of the cheese into squash.)
