Squash Casserole

  • 3 lb. yellow squash
  • 2 c. grated carrots
  • 2 large onions
  • 1 c. milk
  • 8 oz. pkg. herb dressing
  • 1 can cream of chicken soup
  • 1 stick melted butter
  • 8 oz. sour cream
  • 2 eggs, beaten
  • 1 c. cheese (optional)

Directions

    Melt butter in large frying pan or deep pot.

    Cook squash, carrots and onion until tender, add remaining ingredients.

    Pour in baking dish and top with cheese.

    Bake at 350° for 45 minutes. (Makes a lot and freezes well.)
