Squash Casserole

  • 3 lb. summer squash, yellow
  • 2 medium onions, chopped
  • 2 medium carrots, grated
  • 1 c. sour cream
  • 2 cans cream of chicken soup
  • 1 pkg. herb seasoned dressing mix
  • 1 stick butter (less is okay)

Directions

    Cook squash, onions and carrots in salted water (just until tender).

    Drain well and add sour cream and soup.

    Mix dressing with butter (only) no liquid.

    Alternate vegetables with buttered dressing crumbs.

    End with crumbs on top.

    Add grated cheese and bake at 350° for 30 minutes.
