- 3 lb. yellow squash, sliced
- 2 onions, chopped
- 2 carrots, sliced
- 2 cans cream of chicken soup
- 1 (8 oz.) carton sour cream
- 1 small jar pimiento, chopped
- 1/2 c. butter
- 1 pkg. herb-seasoned stuffing mix
Directions

1Cook squash and carrots together in salted water until tender; drain well.

2Add soup, sour cream and pimento.

3Melt butter; stir in stuffing mix.

4Spread half of the stuffing mix in greased casserole.

5Pour in squash mixture.

6Cover with remaining stuffing mix.

7Bake at 375° for 45 minutes.
