- 1 lb. sliced yellow squash
- 1 1/2 c. grated sharp/mild cheese
- 8 Ritz crackers
- 1/4 c. milk
- 1/4 stick oleo or butter
- 1 beaten egg
- chopped onion (optional)
Directions

1Boil squash in salted water; drain and mash with potato masher.

2Add grated cheese (save some to sprinkle on top).

3Add milk and egg that have been beaten together and crushed crackers. Pour in shallow dish; sprinkle with salt and pepper to taste. Sprinkle on reserved cheese.

4Bake at 350° for 15 minutes or until lightly browned.
