- 2 lb. yellow squash
- 1 onion, chopped
- grated carrots (optional)
- 1 stick margarine
- 1 can cream of chicken soup
- 1 small carton sour cream
- pimientos (optional)
- 1 small pkg. Pepperidge Farm stuffing mix
Directions

1Cook well and drain the squash, onion and carrots.

2Mix 1 can cream of chicken soup with sour cream and pimientos.

3Mix stuffing mix with stick of melted margarine (may use more margarine). Press half of stuffing to the bottom and sides of casserole dish. Add squash mixture.

4Put remaining half of stuffing on top. Bake at 350° for 45 minutes (approximately).
