Squash Casserole

Ingredients

  • 4 lb yellow squash
  • 2 lb zucchini squash
  • 1 large onion
  • 2 Tbsp sugar
  • 1 Tbsp salt
  • 2 cups water
  • 1 cup grated white cheese
  • 1 cup grated Velveeta cheese
  • 1 cup half and half
  • 1 stick butter (1/2 stick is usually enough)

Directions

    Slice squash - chop onion.

    Add sugar, salt and pepper and water.

    Simmer until tender (about 20 minutes).

    Drain, put in buttered casserole.

    Alternate squash and cheeses.

    Dot with butter.

    Pour half and half over all.

    Cook 25 minutes or until set at 300°.
