Squash Casserole

Ingredients

  • 1 lb. yellow squash
  • 1 large onion, chopped
  • 1 stick oleo
  • 2 eggs
  • Parmesan cheese, grated
  • 1 Tbsp. sugar
  • 1 (5 1/2 oz.) can Carnation milk
  • 10 crackers, mashed fine

Directions

    Cook squash in small amount of water until tender.

    Pour off water.

    Put onion in oleo to saute; don't brown.
  4. 4
    Save enough oleo to grease casserole.
  5. 5
    Mix squash, onion and eggs with sugar and 1/2 of crackers.

    Put in casserole.

    Cover top with rest of crackers.

    Sprinkle with cheese and bake for 30 minutes or until done at 350°.
