- 6 summer squash
- 1 large white onion
- 5 strips bacon
- 2 eggs
- 1 c. sharp Cheddar cheese
- 1/2 green pepper
Directions

1Cut up squash and green pepper and chop onion finely.

2Put in pan; cover and cook over medium heat until tender, stirring occasionally (20 to 30 minutes).

3Add 1 stick of butter.

4Cook separately 5 bacon strips and crumbled into mixture.

5Beat 2 eggs and add.

6Season with salt and pepper.

7Put into casserole.

8Top with cheese and bake at 350° for 20 minutes.
