Ingredients
- 1 1/2 lb. yellow squash or 2 (16 oz.) cans squash
- 1 small jar chopped pimentos
- 1 c. sour cream
- 1 large onion, chopped up fine
- 1 can cream of chicken soup
- 1 pkg. herb stuffing
- 1/2 c. butter (oleo), melted
Directions

1Cook squash until tender; drain and mash.

2Season with salt and pepper.

3Stir together the stuffing and butter.

4Add half of it, the pimentos, soup, onion and sour cream to the squash and mix together.

5Butter a casserole dish.

6Put half remaining stuffing mix on bottom of casserole.

7Fill casserole with squash mixture. Top with remaining fourth of stuffing mix.

8Bake at 350° for 30 minutes.

9May be prepared the day before.
