- 2 lb. yellow crookneck squash
- 2 small pkg. herb stuffing mix
- 1 can cream of mushroom soup
- 1 (8 oz.) container sour cream
- 1 stick margarine
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 medium onion, diced
- 1 grated carrot (optional)
Directions

1Cook cubed squash and onion 5 minutes, until tender.

2Drain. Mix soup, sour cream, salt and pepper with squash.

3Melt butter and mix with stuffing.

4Put half of stuffing in a baking dish. Put squash mixture on top, then top with remaining stuffing.

5Bake at 350° for 25 minutes.
