Squash Casserole

  • 1 lb. yellow squash
  • 1/4 to 1/2 c. onion
  • 1 egg, beaten (white only)
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • 1/2 c. low-fat margarine
  • 1 c. grated Cheddar cheese
  • 1 c. cracker crumbs (Ritz crackers)

Directions

    Cook squash until tender; drain.

    Mash.

    Add onion, egg, salt, sugar, mayonnaise, half of cheese and cracker crumbs.

    Bake at 350° for 35 to 40 minutes.
