Squash Casserole

Ingredients

  • 6 large squash
  • 2 medium onions
  • 1 pkg. herb stuffing
  • 1 can cream of chicken soup
  • 1 carton sour cream (8 oz.)
  • 1 (4 oz.) can pimentos
  • 1 can water chestnuts, cut fine
  • 1 stick margarine, melted

Directions

    Melt butter and add to stuffing mix.

    Cook squash and onions together.

    Drain and mash.

    Add all other ingredients to the squash.

    In casserole dish, put 1/2 of stuffing in bottom, then all of the squash mixture, then remaining 1/2 of the stuffing over top.

    Bake at 350°

    for about 30 to 45 minutes.

    Freezes well.
