Squash Casserole

  • 1 pan cornbread, crumbled
  • 1 stick margarine, melted
  • 2 1/2 c. squash, cooked and drained
  • 1 (8 oz.) sour cream
  • 1 medium onion, chopped
  • 1 bell pepper, chopped (optional)
  • 1 can cream of mushroom soup
  • salt and pepper to taste

    Mix cornbread

    stick of margarine.

    Put 1/4 to 1/2 in bottom of casserole dish.

    Mix together squash, bell pepper and onion.

    cream and cream of mushroom soup.

    Pour over cornbread. Add remaining cornbread over top. Bake at 350° for 20 to 30 minutes.
