Squash Casserole

  • 6 c. squash, diced
  • 1/4 c. onions, minced
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 c. raw carrots, shredded
  • 2 c. stuffing mix
  • 1/2 c. butter or margarine, melted

Directions

    Cook squash and onion for 5 minutes and drain.

    Add soup, sour cream and carrots.

    Combine stuffing mix and butter or margarine. Put 1/2 stuffing mix on bottom of greased casserole, then squash mixture, then top with remaining stuffing mix.

    Bake 30 to 40 minutes in 350° oven until squash is tender.
