Squash Casserole

  • 1 lb. squash, chopped
  • 1 small onion, chopped
  • 1/2 can cream of chicken soup
  • 1/2 small can pimentos
  • 1/2 c. sour cream
  • salt and pepper to taste
  • 1 (8 oz.) pkg. Stove Top stuffing
  • 1 stick margarine

Directions

    Boil squash and onion in water.

    Drain and mash.

    Add soup, pimentos, sour cream, salt and pepper.

    Mix well.

    Press 1/2 of stuffing mix into large baking dish.

    Spoon squash mixture over top.

    Top with remaining stuffing mixture.

    Bake at 350° for 40 minutes.
