- 5 to 6 crookneck yellow squash
- 8 oz. sour cream
- 1 can cream of mushroom soup
- 1/2 carrot, shredded
- 1/4 c. chopped onion
- 1 stack saltine crackers
- 1/4 c. (1/2 stick) butter or margarine
Directions

1Steam squash until tender.

2Mash squash with a potato masher. In a large bowl combine sour cream, soup, shredded carrot and chopped onion.

3Stir in squash.

4Pour mixture into a casserole dish.

5Top with crushed crackers and then butter or margarine. Bake at 325° for 15 minutes or until golden brown.
