Squash Casserole

Ingredients

  • 2 c. herb stuffing
  • 1/4 c. oleo, melted
  • 1 (10 3/4 oz.) can cream of mushroom or celery soup
  • 1/2 c. sour cream
  • 1/2 c. shredded Cheddar cheese
  • 2 c. yellow squash, shredded or cut up very fine
  • 2 small zucchini, cut up very fine
  • 1/4 c. shredded carrots

Directions

    In a small bowl, combine stuffing and oleo.

    Reserve 1/2 cup stuffing mixture.

    In a 2-quart baking dish, spread remaining stuffing mixture.

    In bowl, combine soup, sour cream and cheese. Stir in squash and carrot.

    Spread soup mixture over stuffing mixture.

    Sprinkle with reserved stuffing mixture.

    Bake at 350° for 40 minutes or until hot and bubbling.

    Makes 6 to 8 servings.
