Squash Casserole

Ingredients

  • 1 1/2 lb. squash (1 qt.)
  • 1 small onion, grated
  • 1 c. sour cream (optional)
  • 1 can cream of chicken soup
  • 1 grated carrot
  • 1/2 pkg. Pepperidge Farm corn bread stuffing

Directions

    Cook squash in a little water and salt.

    Drain and mix with soup, onion and carrot.

    Grease a 9 x 12-inch casserole dish and put in all ingredients.

    Put 1/2 package of stuffing over top and bake 30 minutes at 350°.
