  • 1 1/2 lb. yellow squash, sliced
  • 1/2 c. bell pepper, chopped
  • 1/2 c. onion, chopped
  • 1 tsp. salt
  • 1 can cream of chicken soup
  • 1 can small early English peas, drained
  • 1 c. dry rice
  • 1/3 c. mayonnaise
  • 1/3 c. milk
  • Cheddar cheese, grated

Directions

    Blanche yellow squash and drain.

    Combine all ingredients, except for cheese and pour into a 9 x 13-inch casserole dish. Sprinkle cheese on top and bake for 30 minutes at 350°.
