- 1/2 c. bell pepper, chopped
- 1/2 c. onion, chopped
- 1 tsp. salt
- 1 can cream of chicken soup
- 1 can small early English peas, drained
- 1 c. dry rice
- 1/3 c. mayonnaise
- 1/3 c. milk
- Cheddar cheese, grated
Directions

1Blanche yellow squash and drain.

2Combine all ingredients, except for cheese and pour into a 9 x 13-inch casserole dish. Sprinkle cheese on top and bake for 30 minutes at 350°.
