  • 3 medium squash
  • 1 onion, chopped
  • 1/2 c. bread crumbs or cracker crumbs
  • 1/2 c. shredded cheese
  • 1 egg, beaten
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 Tbsp. margarine, divided

Directions

    Cook squash and onion in a small amount of water until tender; drain.

    Add bread crumbs (saving 2 tablespoons for top), cheese, egg, salt, pepper and 2 tablespoons margarine.

    Spoon into casserole dish.

    Top with the 2 tablespoons of crumbs; dot with the other 2 tablespoons margarine.

    Bake at 375° for 10 minutes or until brown.
