Squash Casserole

  • 2 c. sliced yellow squash
  • 1/4 small onion
  • 1 egg, beaten
  • 1/2 c. evaporated milk
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • dash of black pepper
  • 1/2 c. grated cheese
  • 1/2 c. bread crumbs
  • 1 Tbsp. melted butter

Directions

    Cook sliced squash and onion together in a small amount of water until tender.

    Drain and cool.

    Add beaten eggs, milk, sugar, salt and pepper.

    Put melted butter on the bottom of casserole dish; add squash mixture and top with cheese and bread crumbs.

    Bake 35 minutes at 350°.

    Serves 4.
