Squash Casserole

  • yellow squash
  • 1/2 onion
  • 2 eggs
  • 1/2 stick margarine
  • 1/2 tsp. pepper
  • 1 c. crushed Ritz crackers (reserve some for topping)
  • 1 c. cheese
  • 1 tsp. salt
  • 1/4 tsp. nutmeg

Directions

    Cook squash with 1/2 onion until tender.

    Drain, then mash. Add remaining ingredients.

    Mix and put in casserole.

    Sprinkle with rest of crackers.

    Bake at 325° to 350° for approximately 20 to 25 minutes.
