Squash Casserole

Ingredients

  • 2 lb. squash, sliced
  • 1 small onion, chopped
  • salt and pepper to taste
  • 1 Tbsp. butter, melted
  • 1/2 c. melted butter
  • 1 can chicken soup (undiluted)
  • 1 c. sour cream
  • 2 Tbsp. pimento, chopped (optional)
  • 1/2 pkg. seasoned stuffing mix

Directions

    Cook squash and onion in small amount of water; drain.

    Season with salt, pepper and 1 tablespoon butter.

    Stir in soup, sour cream and pimento.

    Combine 1/2 cup butter and stuffing mix, stirring until well blended.

    Combine half of stuffing mixture and all of squash mixture.

    Put into a 2-quart buttered casserole. Put remaining stuffing mix on top and bake at 375° for 30 minutes.
