Squash Casserole

Ingredients
- 2 lb. squash, sliced
- 1 small onion, chopped
- salt and pepper to taste
- 1 Tbsp. butter, melted
- 1/2 c. melted butter
- 1 can chicken soup (undiluted)
- 1 c. sour cream
- 2 Tbsp. pimento, chopped (optional)
- 1/2 pkg. seasoned stuffing mix
Directions

1Cook squash and onion in small amount of water; drain.

2Season with salt, pepper and 1 tablespoon butter.

3Stir in soup, sour cream and pimento.

4Combine 1/2 cup butter and stuffing mix, stirring until well blended.

5Combine half of stuffing mixture and all of squash mixture.

6Put into a 2-quart buttered casserole. Put remaining stuffing mix on top and bake at 375° for 30 minutes.
