Squash Casserole

Ingredients

  • 3 c. cooked squash
  • 1 chopped onion
  • 1/2 stick margarine
  • 1/2 c. mayonnaise
  • 1 c. grated cheese
  • 1 stack Ritz crackers
  • 1 dash cayenne pepper
  • 1 egg, beaten
  • salt and pepper to taste

Directions

    Cook squash and onion until tender; drain well.

    Stir in margarine.

    Add mayonnaise and 1/2 cup grated cheese.

    Crush crackers; add 1/2 cup to mixture.

    Add beaten egg, cayenne pepper, salt and black pepper; mix well.

    Top with 1/2 cup cheese and 1/2 cup crushed crackers.

    Bake in a 350° oven for 30 minutes, or until brown.
