Squash Casserole

Ingredients

  • 1 c. butter or margarine melted
  • 12 oz. herb seasoned dressing mix
  • 3 c. cooked squash, drained
  • 1 (10 oz.) can cream of mushroom soup
  • 1 c. sour cream
  • 1 small onion, grated
  • 3 carrots, grated
  • 1/4 tsp. pepper
  • 1/4 tsp. salt

Directions

    Mix butter with dressing mix.

    Mix 1/2 dressing mixture with squash, soup, sour cream and rest of ingredients. Put mixture into lightly greased 9 x 13 x 2-inch baking dish.

    Top with remaining dressing mixture.

    Bake at 350° for 45 to 55 minutes.

    A good way to use matured summer squash, just peel, remove seeds and cut up.
