Squash Casserole

Ingredients

  • 2 1/2 c. cooked squash, drain well then mash before measuring
  • 1 can cream of mushroom soup
  • 1 c. sour cream
  • 1 can sliced water chestnuts, drained
  • 1 medium onion, finely chopped
  • 4 Tbsp. margarine
  • 1 pkg. herb stuffing mix

Directions

    Melt margarine and blend with stuffing mix. Place 1/2 of the mixture in baking dish that has been coated with a nonstick spray. In a bowl mix cooked mashed squash, soup, sour cream, onion and water chestnuts.

    Pour mixture into casserole dish.

    Top squash mixture with remaining stuffing. Bake at 350° for 30 minutes.
