- 2 lb. summer squash
- 1/4 c. chopped onion
- 1 can Cheddar cheese soup
- 1 c. sour cream
- 1 (8 oz.) pkg. herbal stuffing mix
- 2 sticks melted butter
- 1 grated carrot
- 2 Tbsp. Parmesan cheese
Directions

1Boil squash and onion in salted water for 5 minutes; drain. Combine sour cream, soup and carrot.

2Fold into squash mixture and add Parmesan cheese.

3Mix melted butter with stuffing mix.

4Take out 1 cup for topping.

5Put in greased 2 1/2-quart casserole. Sprinkle with topping.

6Bake at 350° for 45 minutes.
