Squash Casserole

Ingredients

  • 3 carrots, grated
  • 1 medium onion, chopped
  • 2 c. squash, cooked and mashed
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 (8 oz.) pkg. Pepperidge Farm cornbread stuffing mix
  • 2 Tbsp. chopped pimentos

Directions

    Mix all ingredients and 1/2 of the cornbread stuffing mix. Place in greased casserole.

    Melt 1 stick butter or oleo in small skillet.

    Use other half of stuffing and stir until well buttered. Sprinkle over top of casserole and bake at 350° for 30 to 40 minutes or until crumbs are well browned.
