- 3 carrots, grated
- 1 medium onion, chopped
- 2 c. squash, cooked and mashed
- 1 can cream of chicken soup
- 1 c. sour cream
- 1 (8 oz.) pkg. Pepperidge Farm cornbread stuffing mix
- 2 Tbsp. chopped pimentos
Directions

1Mix all ingredients and 1/2 of the cornbread stuffing mix. Place in greased casserole.

2Melt 1 stick butter or oleo in small skillet.

3Use other half of stuffing and stir until well buttered. Sprinkle over top of casserole and bake at 350° for 30 to 40 minutes or until crumbs are well browned.
