- 2 lb. yellow squash
- 1 carrot, minced fine
- 1 c. cream of chicken soup
- 1 pkg. corn bread stuffing
- 1 minced medium onion
- 1/2 c. sour cream
- 1 stick margarine
Directions

1Cook squash until tender; drain.

2Add onion and carrot to squash; add the sour cream.

3Melt margarine and mix with 1/2 of corn bread stuffing.

4Reserve 1/2 for top.

5Place squash mixture in casserole dish.

6Put reserved stuffing on top, then the cup of soup on top of stuffing.

7Bake at 350° for 30 minutes.
