Squash Casserole

  • 4 large summer squash
  • 2 large onions, diced
  • 1 can cream of mushroom soup
  • 8 or more cheese slices
  • 1 c. crushed Ritz crackers
  • salt and pepper to taste

Directions

    Boil sliced squash and onions until tender; drain.

    Put half in a greased baking dish; add salt and pepper, 1/2 can soup and 4 slices of cheese.

    Then add remaining squash.

    Add other 1/2 can of soup, cheese and crackers on top.

    Bake at 350° until bubbly and brown, about 30 to 40 minutes.
